Roasted Garlic Burgers with Pepperoncini Aioli and Crispy Salami

The patty in these tasty burgers is flavored with roasted garlic and is topped with Swiss cheese, crispy salami, and a spicy pepperoncini aioli. Great for making gourmet burgers at home!

Ingredients:

  • 1 lb ground beef

  • 4 hamburger buns

  • 4 cloves of garlic, roasted

  • 1/2 cup mayonnaise

  • 1/4 cup pepperoncini peppers, chopped

  • 4 slices of salami

  • 4 slices of Swiss cheese

  • 4 lettuce leaves

  • 4 slices of tomato

  • Salt and pepper to taste

  • Olive oil for roasting garlic

  • 4 tsp olive oil for cooking salami

Instructions:

Preheat your grill to medium-high heat


In a small bowl, mash the roasted garlic cloves with a fork and mix them into the mayonnaise to create the pepperoncini aioli


Stir in the chopped pepperoncini peppers


Form the ground beef into four burger patties and season them with salt and pepper


Place the burger patties on the grill and cook to your desired level of doneness, typically 3-4 minutes per side for medium-rare


While the burgers are cooking, heat 4 tsp of olive oil in a pan over medium heat


Add the salami slices and cook until they become crispy, about 2 minutes per side


During the last minute of cooking, place a slice of Swiss cheese on each burger patty and cover the grill to allow the cheese to melt


Toast the hamburger buns on the grill until they are lightly browned


Assemble the burgers by spreading the pepperoncini aioli on the toasted buns


Place a lettuce leaf and a slice of tomato on the bottom bun, followed by the cheesy burger patty and a crispy salami slice


Top with the other half of the bun

Enjoy these delicious low-fat chocolate chip cookie sticks without the guilt. Made with applesauce and minimal fat, they are a healthier treat option that still satisfies your sweet tooth.

Ingredients:

  • 1 cup unsweetened applesauce

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup mini chocolate chips

Instructions:

Preheat the oven to 350F 175C


Line a baking sheet with parchment paper


In a mixing bowl, combine the unsweetened applesauce, brown sugar, granulated sugar, egg, and vanilla extract


Mix well


In a separate bowl, whisk together the all-purpose flour, baking soda, and salt


Gradually add the dry ingredients to the wet ingredients, stirring until just combined


Fold in the mini chocolate chips


Spoon the cookie dough onto the prepared baking sheet, shaping it into stick-like shapes


Bake in the preheated oven for 12-15 minutes or until the cookies are golden brown around the edges


Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely

Caramelized Onion Tart with Mushrooms and Alouette Cheese

Along with the earthiness of mushrooms and the richness of Alouette cheese, this savory tart has the sweetness of caramelized onions. It is all wrapped up in a flaky puff pastry crust. As an appetizer or light meal, it's great.

Ingredients:

  • 1 sheet of puff pastry

  • 2 large onions, thinly sliced

  • 2 tablespoons butter

  • 1 cup sliced mushrooms

  • Salt and pepper to taste

  • 1 cup Alouette cheese, crumbled

  • Fresh thyme leaves for garnish

Instructions:

Warm the oven up to 190C 375F


Set the puff pastry sheet on a baking sheet that has been lined with parchment paper


Roll it out


Set the pan on medium heat and melt the butter


To make the onions caramelized, add them and cook for another 15 to 20 minutes


Put the sliced mushrooms in the pan with the onions that have been caramelized


For about 5 to 7 minutes, or until the mushrooms are soft, cook


Add pepper and salt


Cover the puff pastry with the caramelized onion and mushroom mixture


Add the crumbled Alouette cheese on top of the mix of onions and mushrooms


Put it in an oven that has already been heated up and bake for 20 to 25 minutes, or until the crust is golden brown and the cheese is melted and bubbly


Before serving, sprinkle with fresh thyme leaves

Red Slushy Punch

A vibrant and fruity punch perfect for parties and gatherings. This red slushy punch combines the flavors of cranberry, pineapple, orange, and lemon with a hint of grenadine syrup for sweetness. The optional addition of rum gives it an extra kick for adult gatherings.

Ingredients:

  • 4 cups cranberry juice

  • 1 cup pineapple juice

  • 1 cup orange juice

  • 1/4 cup lemon juice

  • 1/2 cup grenadine syrup

  • 1 cup rum optional

  • Fresh fruit slices for garnish optional

  • Ice cubes

Instructions:

Cranberry juice, pineapple juice, orange juice, lemon juice, and grenadine syrup should all be mixed together in a large pitcher or bowl


To use rum, add it to the mix and stir it well


Cover the mixture and freeze it for at least 4 hours, or until it turns into a slushy consistency


Take the mix out of the freezer when it's slushy and stir it to break up any big chunks


Pour the slushy punch into glasses with ice cubes to serve


If you want, you can add fresh fruit slices as a garnish

Spicy Chipotle Shrimp Scampi

The classic shrimp scampi dish has been spiced up in this Spicy Chipotle Shrimp Scampi. The chipotle pepper adds a smoky heat, and the white wine and lemon juice make a bright, tangy sauce that goes well with the shrimp and linguine. It's an easy and tasty way to make seafood for dinner that will definitely impress!

Ingredients:

  • 1 lb large shrimp, peeled and deveined

  • 1/4 cup olive oil

  • 4 cloves garlic, minced

  • 1 chipotle pepper in adobo sauce, minced

  • 1/4 cup white wine

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon lemon zest

  • 1/2 teaspoon red pepper flakes

  • Salt and pepper to taste

  • 8 oz linguine or pasta of choice

  • 2 tablespoons chopped fresh parsley, for garnish

Instructions:

Warm up the olive oil in a big pan over medium-low heat


Add the chipotle pepper and minced garlic


Saut for one to two minutes, until the garlic smells good


Turn the heat up to medium-high and add the shrimp


Cook for about two to three minutes on each side, until the shrimp is pink and opaque


Take the shrimp out of the pan and set it aside


Put white wine, lemon juice, lemon zest, and red pepper flakes in the same pan


Bring it down to a low heat and cook for two minutes


In the meantime, cook the linguine until it is al dente according to the directions on the package


Remove the water and set it aside


Bring the cooked shrimp back to the pan and add the cooked linguine


Toss everything together until the sauce covers everything well


Add pepper and salt to taste


Add chopped parsley as a garnish before serving


Enjoy while hot!

  • 1 bottle of red wine Cabernet Sauvignon or Merlot

Instructions:

Both red and white wines should be chilled to the right temperature for serving


Put the nuts, berries, and chocolate on a platter or on individual plates


Pour a little red wine into glasses


The Cabernet Sauvignon or Merlot should be the main wines you choose


Choose either Chardonnay or Riesling and pour a small amount of the wine into each glass

Veg Momos Recipe

Veg Momos are delicious steamed dumplings filled with a flavorful mixture of vegetables. They are a popular street food in India and Tibet and are perfect as a snack or appetizer.

Ingredients:

  • 1 cup all-purpose flour

  • 1/2 cup water

  • 2 cups mixed vegetables cabbage, carrots, bell peppers, etc

  • , finely chopped

  • 2 cloves garlic, minced

  • 1-inch piece of ginger, grated

  • 1 green chili, finely chopped adjust to taste

  • 1 tablespoon soy sauce

  • 1 tablespoon oil

  • Salt to taste

  • Black pepper to taste

  • Oil for steaming

  • Soy sauce and chili sauce for dipping

Instructions:

In a bowl, mix all-purpose flour and water to make a smooth dough


Cover and let it rest for 30 minutes


Meanwhile, prepare the filling


Heat oil in a pan, add minced garlic, grated ginger, and chopped green chili


Saut for a minute


Add the finely chopped vegetables and stir-fry on high heat for 2-3 minutes


Add soy sauce, salt, and black pepper


Mix well and cook for another 2 minutes


Remove from heat and let it cool


Divide the dough into small equal-sized balls


Roll each ball into a thin circle, about 3 inches in diameter


Place a spoonful of the vegetable filling in the center of each dough circle


Fold the dough over the filling to create a half-moon shape


Pinch the edges to seal and create pleats, if desired


Repeat for all momos


Heat a steamer or idli maker


Grease the steamer trays or idli molds with oil


Place the momos in the steamer, leaving some space between them to prevent sticking


Steam the momos for 12-15 minutes until the dough becomes translucent and shiny


Remove the momos from the steamer and serve hot with soy sauce and chili sauce for dipping

Salmon and Avocado Nori Rolls Paleo Sushi

Savor traditional sushi flavors with a Paleo twist. Grain-free and gluten-free, these salmon and avocado nori rolls are loaded with nutritious, fresh ingredients. Ideal for a healthy, light meal or snack.

Ingredients:

  • 2 sheets of nori seaweed

  • 1/2 pound fresh salmon, thinly sliced

  • 1 ripe avocado, sliced

  • 1/4 cucumber, julienned

  • 1/4 red bell pepper, julienned

  • 1/4 carrot, julienned

  • 1 tablespoon coconut aminos

  • 1 teaspoon toasted sesame oil

  • 1/2 teaspoon grated ginger

  • 1/2 teaspoon minced garlic

  • 1/4 cup cauliflower rice

  • Salt and black pepper to taste

Instructions:

Place a bamboo sushi rolling mat on a clean surface


Lay a sheet of plastic wrap over the bamboo mat


Place one nori sheet, shiny side down, on the plastic wrap


Wet your hands to prevent sticking, then evenly spread half of the cauliflower rice over the nori sheet, leaving about half an inch at the top edge


Place slices of salmon, avocado, cucumber, red bell pepper, and carrot on top of the cauliflower rice


In a small bowl, whisk together coconut aminos, toasted sesame oil, grated ginger, minced garlic, salt, and black pepper


Drizzle the sauce over the ingredients on the nori sheet


Carefully lift the edge of the bamboo mat closest to you and start rolling the nori sheet and fillings away from you, applying gentle pressure to form a tight roll


Once rolled, use a bit of water to seal the exposed edge of the nori sheet


Repeat the process with the second nori sheet and remaining ingredients


Using a sharp knife, slice each roll into bite-sized pieces


Serve your Paleo sushi rolls with extra coconut aminos for dipping, if desired

Ingredients:

  • 4 medium potatoes, washed and scrubbed

  • 2 tablespoons olive oil

  • 1 teaspoon paprika

Instructions:

Make wedges out of each potato


Add the potato wedges to a bowl and mix in the paprika, garlic powder, onion powder, salt, and pepper


Toss the potatoes until they are well covered


Get the air fryer ready by heating it up to 400F 200C


Stack the potato wedges one on top of the other in the air fryer basket


Flip the wedges over every 15 to 20 minutes until they are golden brown and crispy


Serve hot with the sauce of your choice
